Scuola internazionale delle Arti e della Cultura italiana

Cooking School in FlorenceItaly has always been, due to its geographical position, a meeting point for people and cultures of the Mediterranean and beyond. The effects of this exchange of products, knowledge and customs are found in every sector of human activity: art, language, architecture, science and of course, in food, to the point that Italian cuisine can be considered "fusion". In the same way that Italians have received, however, they have also bestowed their products onto the world, their recipes and their traditions, in a continuously enriching exchange that has made Italian cuisine world renowned. "The Origin of Food" course investigates this centuries-old process, ranging from traditional regional cuisine to new techniques and trends.
Structured in 10 meetings, for a total of 35 hours, it is organized in collaboration with "Giglio Cooking School". The program includes theoretical and practical lessons and field trips in food production. Depending on the season, students will be involved in the olive harvest, in the grape harvest, in the artisan production of beer and bread and will observe the production of fruit and vegetables.
In collaboration with Giglio Cooking School
The Giglio Cooking school was established in 2009, thanks to the intuitiveness of Chef Marcella Ansaldo: to create a place where students can discover and cultivate their talent, learning the techniques, nutritional value, combinations of ingredients, the combination of colors and everything involved in a true understanding of food - culture, history, health, sharing, beauty.
